One Medium Potato ( 5.3. oz )with skin contains 45% daily value for Vitamin C. More Potassium (620 mg) than even bananas, spinach or broccoli. 10% of the daily value of B6. and three times the amount of Thiamine, Riboflavin, Folate, Magnesium, Phosphorus, Iron and Zinc. 
You may want to Think Twice before pealing that Potato. 
Potatoes which are a starchy vegetable Contain 110 Calories per Medium Potato and NO FAT, NO Sodium and NO Cholesterol. 
Potatoes are a Complex Carbohydrate which are our bodies main Energy source. 
20% of the Nutrition is found in the skin. Most of the Vitamin C and Potassium are found in the main part of the potato although the Fiber is also found in the skin. SO eat the entire Potato. 
Potatoes are a fantastic weight loss food. Its not about Reducing Calories to lose weight its more about ELIMINATING the BAD calories. They also contain Antioxidants (cardotenoids and anthocyanins.)
SO Its really all about eating them the right way to receive the most nutrients and not gain any weight. 
Bake, Steam or Boil them but Consider what to top them with. Low sodium Salsa is great. Add them to a Low Sodium Vegetable soup or Make baked potato Fries with no oil and low salt. Try topping them with other veggies and herbs. Try many kinds of spices. 
Potatoes are the most affordable source of potassium and best nutritional value. Potatoes are the best most affordable vegetable. 
To make it a part of a well balanced diet all that is needed is to cut out the oils and fats that all american's add to this food. French fries that are fried in oil or baked potatoes covered in butter and sour cream are not going to be healthy for us but finding a better compliment to add to them that is low fat and low sodium will really be beneficial to our health. 
So CARB UP and EAT RIGHT. :D
